Roasted Broccoli and Yam Salad

Ingredients:
1 Head of Brocolli
1 yam
Lemon
1 cup Parsley
1 can of chickpeas
1 cup of spinach
1 tablespoon of apple cider vinegar
1/3 cup of olive oil
1 cup of quinoa
1/2 cup sunflower seeds, or any seeds of your choice
1 tbps of honey (optional)
How to make:
Oven to 400-420
Cook quinoa for 20 min. 1 cup quinoa to 2 cups water
Chop Broccoli
Spray baking tray with a good quality oil.
Put veggies on the tray and drizzle with olive oil and sprinkle with pepper. I use the tumeric and pepper blend from Epicure.
Pinch of salt if you would like too.
Bake for 20-30 min
Add chickpeas in if you would like them roasted about 15 min in to the veggies baking.
Chop up spinach, parsley, and stir.
Cool the quinoa, and baked veggies.
To make sauce:
1/4 to 1/3 cup of olive oil whatever is left from the 1/3 cup after drizzling the veggies before baking
3 tablespoons of Maple Syrup (add a bit more if it needs to be sweeter)
1 tablespoon of apple cider vinager
Juice of a whole lemon
Add garlic
Add tbsp of honey (optional)
I added Epicure Garlic and Chilli Pepper
Salt and Pepper
Mix it all in, and top off with your choice of:
Nuts
Feta Cheese
Goat Cheese
Chicken
Beef
Falafel
Anything- enjoy!
