Protein Packed Waffles or Pancakes

Get your pan ready to fry, or waffle maker!
Makes approx 8-10 pancakes, 4 large waffles
Ingredients:
1 cup gluten free flour
2 eggs (make it vegan with flax seed eggs)
flax egg= 1 tbsp of water with 2 tbsp ground flax= 1 egg
1 scoop of protein powder
1 tsp baking powder
1/2 tsp baking soda
4 tbsp Maple syrup
2 tbsp of coconut oil
3/4 cup of coconut milk
2 tbsp of apple cider vinager
1 tsp of vanilla extract
1 cup of Saskatoons or berries of your choice
Butter or coconut oil for frying
Directions:
1.) Stir coconut milk and apple cider vineger together and set aside for 5 min.
2.) Mix Flour, protein powder,baking powder, baking soda.
2.) Mix Maple syrup, oil vanilla, then add to milk mix
3.) Add all ingredients together and gently fold in the berries.
4.) Put in waffle maker, or make pancakes.
4.) Freeze these for a quick breakfast idea or for a snack!
