Mandarin Noodle salad with Power Greens Or Romaine Lettuce

Recipe:
Makes 4 salads
Romain Lettuce/ Or any greens 4 cups
1 cup of chopped cucumbers
1 can of mandarin oranges, or 4-6 fresh.
1/2 Package of rice noodles 250 gram bag, add more if you feel you need to! Boil those for 4 min and strain, and rinse with cold water to prevent sticking.
3 green onions chopped fine
1/2 cup cilantro (optional)
4 teaspoons of sesame seeds
(Feel free to toast sesame seeds in a pan for more flavor)
For the Dressing:
1/4 cup of olive oil
4 tbsp of rice wine vinagar
2 tbsp of Tamari to taste (you may want a bit more if your tamari has less salt added)
2 tbsp Sesame oil
A bit of mandarin juice from can - 1 tbsp/2?
Or 1 teaspoon of monk fruit sweetener if dressing needs to be sweeter.
1 tablespoon of Fresh Ginger Root- chopped fine or grated
Mix all together!
Placement:
Greens on bottom
Noodles on top
Oranges
Cucumbers
Cilantro
Onions on top
Drizzle with dressing and top with sesame seeds!
Add any source of protein too!

Almonds
Chicken
Beef
Shrimp
Salmon
