Peanut Butter and Honey Energy Balls

The perfect on the go, pre workout, post workout, easy to pack hiking snack! These power balls are packed with healthy ingredients that will give you instant energy, and the best part is there is no chopping or baking involved, and kids love them too!
Makes approx 30-35 power balls
Dry Ingredients:
2/3 cup oats
1/2 cup unsweetened shredded coconut
1/3 cup dairy free mini or small chocolate chips
2 tbsp of ground flaxseed
1/4 cup chia seeds
1/4 cup hemp hearts
1/4 cup sunflower seeds
1/4 cup pumpkin seeds
1/4 cup raisins
Wet Ingredients
1 cup of natural peanut or almond butter (use sunflower butter if you cannot have nuts)
1/4 cup maple syrup
1/4 cup honey
1 tsp vanilla
If the batch needs more liquid, add more honey or melted coconut oil to make it less sweet.
Directions on how to make:
Line a baking sheet with wax paper or parchment paper.
In a small bowl mix all of the dry ingredients, then set aside.
In a medium bowl, combine all the wet ingredients until smooth.
Combine the dry ingredients with the wet mixture, and mix until all ingredients are well blended.
Using approx 1 tbsp of dough per energy ball, roll mixture into 30-35 balls using your hands or a cookie dough baller.
Wet cookie dough baller and hands often to prevent dough from sticking. Place energy balls onto a baking sheet.
Once complete, place the tray in the freezer for approx 30 min. Then store in an airtight container in the fridge or freezer.
I like to freeze these so they last longer, and they take no time to thaw when you take them out.
