Spinach, Quinoa, Roasted Yam and Goat Cheese Salad

Start by cooking 1 cup of quinoa
(1 cup quinoa to 2 cups of water)
Peel and chop Yam (sweet potato) in cubes
Place in a bowl, and toss with 1 tbsp of olive oil
Spread onto parchment paper on baking sheet35-45 min at 350 until browned
Chop up 1 or 2 chicken breast, and fry in 1 tbsp olive oil until cooked. I used some salt and pepper and lemon for seasoning.
1 cup -Chop up some fresh spinach or kale
1/4 cup- Red onion
1/2 cup pumpkin seeds
1/4 cup of goat cheese ( or more depending how much you would like to put in)
1/2 cup of carmelized pecans or walnuts (see video)
I used 2 tbsp of water, 1 tbsp of cane sugar and 1 drizzle of maple syrup
Let quinoa cool once cooked.
Place in a bowl
Add greens
Onions
Add roasted yam
Add pumpkin seeds
Goat cheese
Chicken
Carmelized Pecans or Walnuts
Chop up some apples, and an avocado for the side
Dressing:
2 tbsp cup of olive oil
2 tsp of balsamic vineger
1 tbsp of maple syrup OR pure honey
1 tbsp of fresh lemon juice
1 tsp Dijon Mustard
Pepper
Sprinkle on and enjoy for a few days!
