Breakfast wraps

1 Cup of yam chopped small
1 Cup of potatoes chopped small, OR shredded
1 onion chopped
Added green onion or chives
1 Cup chopped Spinach
2 gloves Garlic
Salt and pepper
1 cup Salsa
1 can Black Beans
8 eggs
6-8 Wraps (depending if they are small or large)
Watch for ingredients in wraps, they can sometimes be loaded with poor quality ingredients. Watch for wraps having too many ingredients. This one I used is 'ok" its the best I could find, the thing I do not like about it is that it has Palm oil. But only 5 ingredients. So that is why I chose it and it is gluten free.
1.) Start by cooking all the veggies (see video)
2.) Add eggs into veggies and make a scramble
3.) Mix beans with salsa
4.) Put all ingredients together
5.) Make your wraps- if using gluten free or corn wraps, make sure you heat them up before wrapping so they do not crack.
Other options for added protein
Add quinoa to your mix
Add chicken, sausage, pork or beef.

To use less plastic - wrap them in wax paper. They will stick if you freeze them all together.
