Soba Noodle Salad with Creamy Peanut Dressing

1 1/2 cups cabbage
1 cup carrots
1 pepper (red, orange, or yellow)
1/4 cup cilantro (fresh)
1 cup cucumber
1/2 cup broccoli
1 cup edamame beans
1 tsp fresh ginger
1/4 cup green onion
1/4 roasted nuts of your choice
Peanuts
Almonds
Cashews
Dressing
1 tsp Honey (or maple syrup)
1/4 peanut butter
2 tbsp Tamari or Soy Sauce
1 tbsp Rice Wine vinager
2 tbsp Sesame oil
1/4 Cup Olive Oil
1/2 cup water room temp
1 package of Soba Noodles
There are gluten free soba noodles out there
1/4 cup of sesame seeds
(roast these for more taste!)
Start by boiling your noodles
Rinse them with cold water right after so they do not stick together
Place in bowl
Cut up all your vegetables- finely chopped
Cook up any source of protein you would like to add. This would also be amazing with a hard boiled eggs or roasted chickpeas.
For the dressing- Mix all together in a bowl, and mix with all the salad ingredients!
I handy lunch idea- make this into a wrap!
You will have enough salad for a few meals!
